Resumen: Como parte del estudio “National Health and Nutrition Examination Survey (NHANES)” que se desarrolla en los EE.UU. de forma continua desde al año 1999, se ha venido evaluando la huella de carbono y la calidad de las dietas más populares entre los adultos estadounidenses. Las dietas basadas en plantas, como la vegana y la vegetariana, presentan una huella de carbono más baja en comparación con las dietas pescetarianas, omnívoras, paleo y cetogénicas. Sin embargo, las dietas pescetarianas son las que vienen mostrando la mayor calidad de la dieta. Los hallazgos enfatizan compensaciones entre la calidad nutricional y la huella de carbono en diferentes dietas.
